Crisp Cornish Hen

  1. Blanche hen by dunking Hen into boiling salt water for 30 seconds
  2. After 30 seconds dunk hen into icewater bath
  3. Repeat twice
  4. Dry hens in regrigerator overnight
  5. Remove hens from fridge and salt liberally, let hens come to room temperature
  6. Heat oven to 400 degrees
  7. Melt 8 tbsp of butter, with 2 tbsp Honey and mix with rosemary, sage or thyme
  8. Baste hens with butter/honey/spice mix
  9. Place hens into 400 degree oven on rack with baking sheet
  10. Remove every 5-10 minutes, pour drippings into butter mixture and baste hens
  11. Repeat until skin is dark brown and internal temperature is 145
  12. Let hens rest for 10 minutes
  13. Split hens in half with cleaver
